Chicken Fried Rice- Sri Lankan Style

Fried rice is a Rice based dish consisting of Rice stir fried together with Vegetables, Spices , Aromatics and a meat or seafood. This particular rice dish was originated in China around 6th century and Also popular in many other countries as a staple side dish.

How To Make:

Ingredients:

  • 300 g of Chicken Breast

  • 400 Grams of Cooked Rice

  • KVC Garlic Paste- 1  Teaspoon

  • KVC Soya Sauce -2/3 Tablespoons

  • KVC Tomato Sauce - 1Tablespoon

  • KVC Ginger-Garlic Paste-1 Teaspoon

  • Salt- 1 Teaspoon

  • 2 Eggs

  • Large Onion-1/2

  • Curry Leaves

  • Pepper- 2 Teaspoons

  • Carrot & Cabbage(shreadded)- 100 grams

  • Spring Onions/ Leeks-50 grams

  • Oil (Vegetable/Coconut)- 2 Cups

To Marinade the chicken:

  1. Cut the chicken into shreadded style pieces. Mix the Chicken with 1 Teaspoon Salt,1/2 Teaspoon Pepper,1/2 Teaspoon Turmeric Powder,1 Teaspoon KVC Garlic paste

  2. Add water & 1 Teaspoon of Salt to the marinated shreadded Chicken and Boil for 20 Minutes in High Heat.

  3. Then add Pepper,Salt ,KVC Garlic Paste & Turmeric Powder & marinade Shredded Chicken for 30 minutes.

  4. There after Fry the Shredded chicken until golden brown and Set it aside.

Steps:

  1. Next, add some Oil to a pan and add Curry leaves,Onion & KVC Ginger & Garlic Paste.

  2. Fry it until golden brown and add some chopped Onions.

  3. Then Add Carrot, Spring onions,Cabbage to The Mixture and mix them well.

  4. Let it fry and add some Pepper, Salt, KVC Soya Sauce, KVC Tomato Ketchup and Mix well.

  5. After 2 minutes , Add The 2 Eggs(beaten) and Mix everything well in medium heat.

  6. Next, add the Cooked Rice and Mix well.

  7. Also add prepared fried chicken and some Spring Onion and Mix well.

  8. Finally, cook and mix well for not more than 1-2 minute and Enjoy..
